Whole Cranberry Sauce with Orange Zest

1 cup water
1 12 oz bag fresh cranberries
1 1/2 cups sugar
1 tsp. grated orange rind

Directions:
In a saucepan, boil water and sugar for 5-7 minutes, stirring until the sugar dissolves.
Add washed cranberries and reduce heat and simmer over low heat
for 5 minutes. Do not stir. Then grate about half a small orange or until you get 1 tsp of grated orange rind (zest).
Stir zest and cranberries every so often and let boil until you see the cranberries pop and it starts to turn very deep dark red.
Cool and put in refrigerator over night to set.
Makes about 2 cups.
