Recipe for bread dumplings (Semmelknoedel)
Serves 4 as a sidedish
1 lb white bread DRIED and CUT into 1/2-inch cubes
1 large onion
4 whole eggs
2-3 cups milk
1/4 lb butter OR margarine
2 tablespoons parsley freshly chopped
2 tablespoons flour (optional, to bind dumpling)
Brown the onions and parsley.
Then pour over the diced dried bread (non seasoned stuffing can work).
Mix milk, eggs, salt and pepper until its completely mixed. Then fold in to the bread cubes. Then add flour this helps bind the dumplings.
Mix well and let rest about 1/2 hour.
To form dumplings make 1-2 inch balls and cook in salted water for approx. 12 minutes.
